My Afternoon Tea Mimosa takes the classic mimosa to new heights with a refreshing blend of ruby red grapefruit and pineapple juice. It bursts with bright citrus and tropical sweetness, topped off with crisp, bubbly sparkling wine and finished with a mint sugar-rimmed glass. It’s the perfect balance of tartness, sweetness, and fizz!

This recipe follows a simple, balanced 1:1 ratio of mimosa mixture to chilled sparkling wine. The mixture can be prepared ahead of time and stored in the fridge, while the sugar-rimmed glasses can be prepped up to an hour before serving—allowing you more time for other preparations.

While I love serving this in Champagne coupes, flutes work just as beautifully, with the mint sugar rim adding that perfect finishing touch to both.

Ingredients

Chilled sparkling wine – Options include Prosecco, Champagne or sparkling wine made locally

Pineapple juice – Use pure juice for the most natural flavour.

Ruby Red grapefruit juice – A slightly milder and less bitter alternative to regular grapefruit juice. This one from Ocean Spray is delicious.

Fresh mint – Regular garden mint available from either your veggie patch, neighbour, supermarket or green grocers.

Caster sugar – Also known as superfine sugar, its texture is perfect for rimming the glasses in this recipe.

Orange – A small ripe orange or other citrus fruit is perfect.

Optional edible flowers – I’ve used some pressed pansies however any edible flower will work really well as a garnish or just a mint leaf if you prefer.

Make the mint sugar

Finely chop the mint.

Place the mint in a small bowl together with the caster sugar and mix well.

Tip the sugar/mint mixture on to a plate a little larger than the glasses and shake until the sugar is evenly distributed.

Rim the glasses with sugar and mint

Cut the orange into 4 segments. Make a small slit in one segment and run it along the rim of the glass. Repeat with remaining glasses replacing the segment with a fresh one when it gets untidy.

Take a glass, turn it upside down and gently press it into the sugar/mint mixture. Set aside.

Give the sugar a little shake to even it out, then repeat with the next glass. Repeat the process until all the rims have been coated in sugar. Put the glasses aside until required.

Make the mimosa mixture

Measure equal parts pineapple juice and ruby grapefruit juice into a jug, stir. Cover with plastic wrap and refrigerate until you are ready to serve.

Make the Afternoon Tea Mimosas

Open the chilled sparkling wine and fill each glass just under half full.

Add the mimosa mixture taking care not to pour too close to the sugared rim otherwise it will dissolve before your guest’s see how amazing it looks!

Garnish with an edible flower or a mint leaf. Serve immediately.

FAQs about Afternoon Tea Mimosas

How can I make these without the alcohol? You can use one of the many non-alcoholic sparkling wines that are available these days that will give you the same flavour but without the effects of the alcohol. Otherwise, try soda water or even clear lemonade for a refreshing but sweeter alternative.

How many mimosas does this recipe make? The recipe below makes 10 to 12, however this all depends on the size of your glasses. The general rule of thumb for mimosas is half sparkling wine+ half fruit juice so no matter the size of your glasses, stick to that formula.

  • 750 ml 26 2/5 oz Sparkling Wine

  • 375 ml 13 1/5 oz Pineapple juice

  • 375 ml 13 1/5 oz Ruby red grapefruit juice

  • 8 8 Fresh mint leaves

  • 100 g 3 1/2 oz Caster / superfine sugar

  • 1 small 1 small Orange (or other citrus fruit)

  • Edible flowers or mint leaves to garnish
