The first time I tried Green Goddess Dressing I was blown away by the hit of flavour – I couldn’t quite believe that a small blob of this incredible dressing could elevate simple ingredients so successfully.
Super popular in the 70’s and 80’s and aptly named for its beautiful green hue, my Green Goddess Dressing is a delicious blend of avocado, mayonnaise and herbs together with anchovies, lemon juice, red wine vinegar and garlic. When combined with mini brioche slider buns, butter lettuce, tomatoes and smokey, salty bacon, it takes a simple BLT to another dimension.
For this recipe I’ve used mini brioche slider rolls that come in a pack of 10. They are imported from France and available at my local Woolworths or Coles here in Adelaide. If you can’t find something similar then try mini bake at home rolls instead. Cook per instructions on the pack and allow to cool. Then simply split from the top like a hot dog, fill with bacon, lettuce and tomato then top with green goddess dressing.
Now, you know that if I can find a store-bought ingredient that will do the job just as easily as making something yourself then I’m going to share it with you right? Well if you don’t want to make the Green Goddess Dressing then absolutely feel free to replace it with a bottle or jar from your local supermarket. There are plenty of excellent ones out there and if they are a little too runny then add a dash of whole-egg mayonnaise just to thicken it up. It will still hold plenty of flavour and really complement the BLT’s. This one from Coles is delicious (and no one has to know, it can be our little secret).
Whatever you end up using, my Mini BLT Sliders with Green Goddess Dressing are the perfect addition to any afternoon tea table. P.S. Keep any leftover dressing and serve it the next day with a prawn salad or poached eggs and seeded toast…delicious!
What you’ll need to make Mini BLT Sliders with Green Goddess Dressing


Ingredients description
Mini BLT sliders
- Bacon rashers: shortcut works best, with just a small amount of fat
- Olive oil: spray or a few drops to cook the bacon
- Butter lettuce leaves: or you can sub with iceberg if you prefer
- Ripe tomatoes, similar size to the buns works well so you only need one slice and there is little overhang
- Mini brioche slider buns: Usually available in a pack of 10, but you can substitute with mini bake at home dinner rolls
- Unsalted butter: spreadable consistency or use margarine instead
Green Goddess Dressing
- Whole egg mayonnaise: I use S&W brand but any store bought whole egg is fine
- Avocado: Preferably the Hass variety but any variety will work well
- Garlic: Fresh is best
- Anchovy fillets: In oil from a tin or jar
- Lemon juice: Fresh not bottled
- Red wine vinegar: You can substitute with half the quantity of white wine vinegar if required
- Coriander, Flat leaf / Italian Parsley, Mint and Chives: All fresh
- Salt: table salt
How to make Mini BLT Sliders with Green Goddess Dressing

Make the dressing

Place all ingredients in a small food processor or blender and mix on medium speed until combined.

Place in a small bowl, cover with plastic wrap and refrigerate until required.
Make the sliders

Cook the bacon in the olive oil unitl brown and slightly crispy. Drain on paper towels. Slice the tomato into rounds. Wash the butter lettuce leaves then pat dry with paper towels.

Cut open the brioche, spread each side with a little butter then place a lettuce leaf, followed by a slice of tomato, then a slice of cooked bacon. Top with a generous dollop of Green Goddess Dressing, replace the top of the mini slider bun and secure with a decorative toothpick. Because the brioche has a high amount of butter, the dressing won’t make the bread too soggy so it’s safe to put it on last. You actually want it to soften the brioche up a little as they can sometimes be a little dry in texture.
Full disclosure: I have used store-bought Green Goddess in this photo. The original image I took had the ingredients in the wrong order so I had to remake the recipe a few weeks later. Unfortunately my avocado wasn’t ripe enough for the dressing and all the ones in the shop were like rocks! They still tasted amazing lol. See FAQs below for suggestions.

Finish with a toothpick to keep everything together and serve on a plate or an afternoon tea stand.
Frequently Asked Questions
Can I use store-bought Green Goddess Dressing? Absolutely. If it is too runny then add a small amount of mayonnaise to thicken it up. I used the Coles Green Goddess for the sequence photo above when I realised I had put the fillings in the wrong order!! Ranch dressing also works if you can’t find any on the shelves. Just rename the dish to Mini BLT sliders with ranch dressing and you’re all set! The Paul Newman’s ranch is my favourite.
I can’t find the mini brioche rolls or any little buns that are suitable, what else can I use? These work well as finger sandwiches. Just make sure you place the ingredients in the following order: butter the bread, then add the lettuce, tomato, dressing, bacon. Top with the other buttered bread slice, cut off the crusts then cut into three even fingers.

Can I make these ahead? Yes. Make them up to 3 hours before serving, but leave the toothpicks out. Just cover with plastic wrap and put in the fridge. Remove when ready to serve and add the decorative toothpicks (or plain toothpicks, they look good too.)
