My mini ham and mustard croissants are very easy to prepare ahead and feature crowd pleasing flavours that suit even the fussiest of guests. Tying the chive is probably the hardest part of the whole recipe but they do make a wonderful garnish as well as bringing a little flavour and colour to the croissants.

When I’m not hosting an Afternoon Tea I like to make these on Christmas morning as well as over the festive period. They’re a great way to use up the ham which can start to get a bit much by Boxing Day. Of course you can leave off the chive bow if you’re just serving them to the family.

How to make Mini Ham and Mustard Croissants

Line a baking sheet with baking paper.

Preheat the oven to 160 C Fan / 320 F Fan.

Cut each croissant in half lengthways and lay them out on the baking sheet.

Cheesy mustard butter ingredients

Roughly chop the grated cheese then add it to a small bowl together with the butter and wholegrain mustard. Stir until well combined.

Mini ham and mustard croissants

Spread a little of the cheesy mustard butter mixture on one side of each croissant then top with a slice of ham, trimming if necessary so only a small amount hangs over the side then top with the other side of the croissant.

Bake in the oven for 8-10 minutes until crispy and the cheese has melted.

Tie a chive around the mini ham and mustard croissants

Remove from the oven, tie a chive around the centre of each croissant, snip the ends if necessary, then serve on a tiered stand and/or separate plate or platter.

FAQs about Mini Ham and Mustard Croissants

Can I freeze these? Yes they freeze really well. Make up the croissants without the chive. Place them in a ziplock bag and lay them flat in the freezer. Freeze for up to 1 month for best results.

To serve: Remove from the freezer and place on a tray lined with baking paper. Leave to defrost for 30 minutes then bake as per the instructions above.

  • 8 Mini 8 Mini Croissants

  • 150 g 5 2/7 oz Leg ham

  • 75 g 2 2/3 oz Unsalted butter, softened

  • 75 g 2 2/3 oz Cheddar cheese, grated

  • 1.5 tablespoons 1 1/2 tbsp Wholegrain mustard

  • 8 8 Fresh chives (as long as possible)
