Ingredients for Pimm’s Half & Half

Pimm’s No. 1 Cup – A medium-dark coloured spirit made from infusing gin with herbal botanicals, caramelized orange and delicate spices.

Lemonade – Use a good quality carbonated clear Lemonade for best results (mine’s so clear in the photo you can’t see it! It’s actually sitting above the ginger ale….!)

Ginger Ale – Use a good quality carbonated Ginger Ale. Don’t use Ginger Beer which is fermented and won’t give the cocktail quite the same crisp flavour. The Schweppes one has a beautiful flavour and is not too sweet.

Mint leaves – A fragrant herb known for its refreshing, cool flavour and aromatic leaves. Use the common variety found in gardens and available to purchase at the supermarket and green grocer stores.

Strawberry – Sweet with a slight tartness, look for medium sized strawberries for this recipe.

Orange – Sweet, tangy, and slightly acidic. Look out for a nice orange colour, firm skin, and no brown spots or bruises

Lemon – Sharp, tangy, and acidic with a slight sweetness. Look for unblemished, firm lemons that feel heavy for their size and have no tinges of green.

Cucumber – I prefer Lebanese cucumbers for their flavour and dark green appearance, however any variety will work as long as they are firm and fresh.

Ice cubes – Make sure you have plenty on hand.

Prep the ingredients

You will need a large dinner plate for the fruit.

Slice the orange and lemon into 1cm (3/8″) wide pieces then cut them into small segments. Place them on the plate.

Wash and dry the strawberries. Keep aside 6 whole ones (include their green leaves) then halve the others. Place on the plate.

Wash and dry the cucumber. Slice in half, then cut in half lengthways. Take a teaspoon and run it along the seeds until all are removed.

Cut into thick slices the same width as the orange and lemon pieces. Place them on the plate.

Pick the mint leaves and place them on the plate with the rest of the fruit.

Make the skewers

Take a whole strawberry and make a small incision with a knife at the base. Insert the top of the skewer into the opening about halfway to secure.

Add the fruit in the following order:

  • Mint
  • Orange
  • Cucumber
  • Strawberry
  • Lemon
  • Mint
  • Cucumber
  • Orange

Make the fruit skewers a few hours ahead then cover and place in the fridge until required.

Make the Pimm’s Half & Half

You will need six tall glasses.

Add a handful of ice to each glass.

Measure 180 ml / 6 fl oz of Pimms into a measuring jug, then divide equally between the glasses (30ml / 1 fl oz per glass)

Add the ginger ale and the fruit skewer

Add ginger ale until half full.

Place a fruit skewer in each glass.

Add the lemonade

Top up with lemonade. It will fizz a little.

Add a decorative paper straw.

FAQs about Pimm’s Half & Half

Can I make these in a jug? Yes. You will need to make extra fruit skewers and use a jug with a capacity of 1 litre / 33 fl oz. Add ice then 300ml / 10 fl oz of Pimm’s. Top up the remainder of the jug with half ginger ale and half lemonade. Pour into glasses and add a fruit skewer and paper straw. Serves 10-12.
