How to make Roast Beef & Horseradish Sandwich Stacks

Spread the butter on all 9 slices of bread. Keep the butter close by as you will need it for the middle bread layer.
Spread a small amount of horseradish cream over three of the bread slices then lay two slices of beef on top of each slice making sure the stay within the crusts.
Add a slice of buttered bread, press gently to seal, then spread a little more butter over the top.

Add the Swiss cheese slice, spread over some mayonnaise, then finish with a few leaves of baby spinach. TIP: pinch off the stems so they lay flat.
Finish with the final slice of bread then press down so everything is nice and flat.
Remove the crusts

Take a serrated / bread knife and with a light sawing motion (don’t press down) carefully remove the crusts. Check that all three sandwiches are the same size then cut one in half (light sawing motion again), then line it up next to the other two uncut sandwiches and score the tops so they are the same size. Cut then cut in half again until you have 12 squares of the same size.
Storage
Line an airtight container with baking paper then add the sandwiches. Wet two or three sheets of paper towel then wring out until damp. Cover the sandwiches completely making sure to tuck in the ends, add the lid, then store overnight in the refrigerator.
To serve
Insert decorative toothpicks then arrange on a plate or platter and serve immediately.

FAQs – Roast Beef & Horseradish Sandwich Stacks
Can I make these sandwiches ahead of time?
Yes, these are perfect for making ahead. Prepare them the day before, store in an airtight container with damp paper towel as instructed, and refrigerate overnight. This helps keep the bread soft and fresh.
What type of roast beef should I use?
Thinly sliced rare roast beef works best for tenderness and flavour. You can use leftover homemade roast beef or good-quality slices from the deli.
Can I use a different type of bread?
A soft white sandwich loaf is ideal for traditional finger sandwiches as it gives a neat, clean finish. You can use wholemeal or grain bread, but it will create a more rustic look.
Is there a substitute for horseradish cream?
Yes! Simply mix 1 tsp of horseradish with 1 tsp mayonnaise. Dijon mustard can also be used for a different but complementary flavour: Mix 1 tsp mustard with 1 tsp mayonnaise for a Dijonnaise.
How do I keep the sandwiches from drying out?
Storing them in an airtight container with damp (not wet) paper towel placed over the top will keep them soft and fresh. Make sure the paper towel fully covers the sandwiches.
Can I make these without cheese?
Yes, you can leave out the Swiss cheese if preferred. The sandwiches will still be delicious.
How far in advance can I cut the sandwiches?
You can cut them the day before serving. Just ensure they are stored correctly so they maintain their shape and freshness.
What’s the best way to get neat, even squares?
Use a serrated knife and a gentle sawing motion when removing crusts and cutting. Avoid pressing down, as this can squash the layers.
Are these suitable for Afternoon Tea?
Absolutely. These are a classic savoury option and pair beautifully with sweet treats, making them ideal for a traditional Afternoon Tea spread.
